Kimchi Recipe

Ingredients:

  • 1 head Napa cabbage
  • 1/2 cup sea salt
  • 6 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons fish sauce
  • 2 tablespoons Korean chili powder (gochugaru)
  • 1 tablespoon sugar
  • 4 green onions, sliced
  • 1/2 cup Korean radish (mu), peeled and julienned
  • 2 tablespoons shrimp paste (saewujeot) — optional
  • 1/4 cup water
  • Quart-sized glass jar with lid

Instructions:

  1. Cut the cabbage into quarters and remove the core. Cut each quarter into bite-sized pieces and place in a large bowl.
  2. Sprinkle the salt over the cabbage, making sure to get salt between the leaves. Use your hands to mix well, then let sit for 2 hours.
  3. Rinse the cabbage thoroughly with cold water to remove excess salt, then drain in a colander for 30 minutes.
  4. In a separate bowl, mix together the garlic, ginger, fish sauce, chili powder, sugar, green onions, radish, shrimp paste (if using), and water to make the seasoning paste.
  5. Add the drained cabbage to the seasoning paste and mix well, making sure every piece is coated.
  6. Pack the kimchi mixture tightly into a quart-sized glass jar, leaving at least 1 inch of headspace.
  7. Seal the jar tightly with a lid and let sit at room temperature for 24–48 hours, depending on how sour and fermented you like your kimchi.
  8. Once the kimchi is fermented to your liking, transfer it to the refrigerator to slow down the fermentation process and allow it to develop more complex flavors.
